Banana Crumb Cake


I've been promising for a while to post this recipe up and today is finally the day!
To be honest I had had never heard of crumb cake until I saw it on "Cake Boss" (I love that show!) and realised I needed it in my life! 
After doing a little Pinterest searching, a recipe popped up for the Banana version which I was immediately sold on. 
I did some experimenting and have altered the recipe slightly to make my own version and it is good!
It is dense, squidgy, banana-ry and lovely.
The good thing about this cake is its fairly simple, little hands can get involved and it keeps really well! 
Its perfect for mid afternoon with a cup of tea but I've also been known to add a (not-so-small) spread of nuttella and enjoy with a Saturday morning coffee...

You can find this recipe all over Pinterest but this one is my own slightly adapted version. Although overripe bananas are usually sitting in everyone's fruit bowl at some point, buttermilk is not really a household staple! So I substituted yoghurt and found it works just as well. 

Ingredients:
1 x Egg
1 x Cup of Sugar
1/2 cup Unsalted Butter
1 x Teaspoon Vanilla
1/2 cup Natural Yoghurt
2 Overripe Mashed Bananas
2 Cups of Plain Flour
1/2 Teaspoon Bicarbonate of Soda
1/2 Teaspoon Baking Powder
1 Teaspoon Cinnamon

For the Crumble Topping:
1/2 Cup Sugar
1/2 Cup Plain Flour
4 Tablespoons of Butter Melted
1/2 Teaspoon Cinnamon 
Pinch of Salt

In a mixer (if you have one) beat together the egg, sugar and vanilla until combined then add the butter and beat again until smooth.
Ask your little person to mash the Bananas for you- it keeps them busy!
Add the yoghurt and Bananas and mix again.
In a separate bowl combine the dry ingredients then slowly add to the wet ingredients until fully incorporated.
To make the crumble, combine the sugar, flour, melted butter, cinnamon and salt using your hands to make a crumbly type mixture. I like big crumbs!
Pour into a standard sized, greased, loaf tin then do the enjoyable task of not-so-gently crumbling the topping onto the batter.
Bake in a pre heated oven (about 180) for 45-50 minutes.
Dust the top (very) generously with icing sugar. Cake Boss style
Try to wait until it cools down before sneaking a piece, it's much nicer cold!
